Method
Cupcakes
- Preheat the oven to 180°C.
- Cream together the butter and sugars until light and fluffy.
- Add the eggs and vanilla extract, whisking until the mixture becomes fluffy.
- Gently fold in half of the flour, baking powder, and salt. Add the milk and coffee mixture, then fold in the remaining flour. Mix until smooth and well combined.
- Pour in piping bag. (optional)
- Scoop the batter, or pipe equally into cupcake liners and bake for 20 minutes, or until a skewer inserted into the center comes out clean.
- Let it cool completely before adding icing.
Frosting
- While the cupcakes are baking, prepare the icing. Using a stand mixer, beat the butter until it becomes lighter in color.
- Gradually add the powdered sugar, milk with coffee, vanilla extract, and salt. Beat until creamy and smooth.
- Pipe the icing onto the cooled cupcakes and dust with cocoa powder.
