Blueberry Muffins 🫐

Ingredients
  

Cupcake
  • 115 g melted butter
  • 200 g sugar
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • 1 cup Greek yogurt room temperature
  • 1 tsp baking powder
  • ½ tsp salt
  • 250 g all-purpose flour
  • 1 cup or more! blueberries, tossed with 2 tbsp flour to keep them from sinking
  • Brown sugar for sprinkling on top

Method
 

  1. Preheat your oven to 180°C and line a muffin tray with paper cups.
  2. In a large bowl, whisk together the melted butter and sugar until smooth.
  3. Add the eggs, one at a time, then mix in the yogurt and vanilla until everything is well combined.
  4. Gently fold in the flour, baking powder, and salt using a spatula, just until combined.
  5. Add the blueberries and give the batter a few gentle folds.
  6. Scoop the mixture into the muffin cups and sprinkle brown sugar on top.
  7. Bake for about 20 minutes, or until golden and slightly cracked on top.
