Equipment

Ingredients
  

Meringue
  • 4 egg whites
  • 200 g icing sugar
  • 1/2 tsp cream of tartar
  • 1 tsp of vanilla
  • Drop gel coloring or powder Optional
  • gold leaves for decoration Optional

Method
 

  1. Preheat oven to 160c.
  2. In a very clean mixing bowl, beat the egg whites, cream of tartar, and vanilla on medium high speed until foamy.
  3. Slowly add sugar one tablespoon at a time, let sugar dissolve after each addition.
  4. Continue beating the egg whites until you reach a soft peak stage. It takes around 10-12 minutes.
  5. You can add a drop of color if you wish.
  6. Add the meringue mix in a piping bag. Pipe it and to the oven for 60-90 minutes depending on oven.
  7. Open the oven halfway through to get rid of any humidity, and close again.
  8. Turn of the oven, and keep meringue inside until oven cools completly.
