Preheat oven to 160c.
In a very clean mixing bowl, beat the egg whites, cream of tartar, and vanilla on medium high speed until foamy.
Slowly add sugar one tablespoon at a time, let sugar dissolve after each addition.
Continue beating the egg whites until you reach a soft peak stage. It takes around 10-12 minutes.
You can add a drop of color if you wish.
Add the meringue mix in a piping bag. Pipe it and to the oven for 60-90 minutes depending on oven.
Open the oven halfway through to get rid of any humidity, and close again.
Turn of the oven, and keep meringue inside until oven cools completly.
