Ingredients
  

Cupcakes
  • 120 g soft butter
  • 60 g sugar
  • 60 g brown sugar
  • 2 eggs, room temperature
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 135 g flour, sifted
  • 1/2 cup warm milk + 2 tsp coffee powder
  • Pinch salt
  • 2-3 tbsp Cocoa powder for dusting
Frosting
  • 200 g butter, room temperature room temperature
  • 400 g powdered sugar
  • 2 tbsp milk + 1 tsp coffee powder
  • 1 tsp vanilla extract
  • Pinch salt

Method
 

Cupcakes
  1. Preheat the oven to 180°C.
  2. Cream together the butter and sugars until light and fluffy.
  3. Add the eggs and vanilla extract, whisking until the mixture becomes fluffy.
  4. Gently fold in half of the flour, baking powder, and salt. Add the milk and coffee mixture, then fold in the remaining flour. Mix until smooth and well combined.
  5. Pour in piping bag. (optional)
  6. Scoop the batter, or pipe equally into cupcake liners and bake for 20 minutes, or until a skewer inserted into the center comes out clean.
  7. Let it cool completely before adding icing.
Frosting
  1. While the cupcakes are baking, prepare the icing. Using a stand mixer, beat the butter until it becomes lighter in color.
  2. Gradually add the powdered sugar, milk with coffee, vanilla extract, and salt. Beat until creamy and smooth.
  3. Pipe the icing onto the cooled cupcakes and dust with cocoa powder.
